What's special Soup Properly pre-treated pork bone is boiled for over 10 hours to a rich and creamy consistency, eliminating the smell of pork. As the soup thickens, the delightful aroma of pork bone becomes more pronounced.
Sauce A salt-based sauce is paired with the soup to gently complement and enhance the pork bone broth flavor. The sauce is full of glutamic acid (a form of amino acid) and when paired with the pork bone broth (which is full of inosinic acid) they create a synergy and bring out an even stronger “umami” feel.
Noodles Same as the traditional Japanese style, we chose noodles that are more absorbent. The noodles are shaped slightly flat, allowing it to pick up more of the soup and give a punch of flavor in every bite.
