Last Friday, we had our 2nd successful pop-up dinner. We served a Thanksgiving-inspired turkey paitan ramen to over 100 guests. The turkey based broth is rich and thick, and comes with turkey chashu, brussel sprouts roasted with garlic butter, cream cheese mashed potatoes, a turkey-cranberry umami paste, and fresh Italian parsley. It’s all the Thanksgiving flavors we love in a ramen bowl.
This ramen is truly unique. While our chef is well-known for his traditional ramen, he also has broad experience in other cuisines which enabled him to create this innovative dish. It’s no small feat to find the perfect balance for these ingredients, and balance is key to good ramen.
When a guest came up to order a second bowl, and when a family asked if the pop-up was open the next day because they wanted to come back, we knew this ramen hit the spot. Thank you to our guests for coming!
